On Wednesday, March 18, 2026, step beneath Zupan’s Markets on Burnside and into Cellar Z—a hidden, subterranean private dining space wrapped floor-to-ceiling in wine bottles and designed for unforgettable evenings.

This intimate winemaker dinner features X Novo winery, with both the owner and winemaker in attendance, alongside a thoughtfully crafted multi-course dinner by Chef John Eisenhart. Together, they’ll guide guests through an immersive exploration of one extraordinary vineyard, told through multiple winemaking voices.

You’ll enjoy X Novo’s own wines alongside selections from acclaimed producers who source fruit from the same vineyard: Walter Scott Wines, Morgen Long, and Abbott Claim. Each wine offers a distinct interpretation of place—highlighting how philosophy and technique shape expression, even when the vineyard remains constant.
