Sparkling Wine Dinner at SubTerra

Corollary Wines, known for exclusively producing distinctive traditional method sparkling wines in Oregon’s Willamette Valley, has announced a sparkling wine dinner at SubTerra on Sunday, July 16, 2023 at 5pm for $150 per guest. There will be a gathering hour with an oyster bar by Cascadia Shellfish, followed by a four-course Guatemalan-inspired feast with paired bubbles from Corollary Wines.

Jeanne and Dan Diephouse of Corollary Wines have had an ongoing conversation with Stephanie and Javier Santos, the chef behind SubTerra, about creating connection through food and wine. SubTerra has served impeccably balanced and beautifully presented classic dishes from its inception, but Chef Javier began introducing specials inspired by his Guatemalan heritage and have taken the restaurant to a whole new level of culinary delight. Jeanne and Dan are excited to step out of traditional Euro-centric food pairings and pair bubbles with flavors and textures from around the globe. They are particularly excited for everyone to try the duck empanadas, made in the Guatemalan style with masa dough, while sipping their sparkling wines.
