A Natural Selection

Natural Selection is Portland’s newest destination for supper club dining.

Served in a warm, European-style setting, the menu combines both rustic and modern cooking techniques while highlighting the flavors of France, Italy and Spain. Chef Aaron Woo turns to the garden for his inspiration.

The restaurant offers a menu with all items available à la carte or as a four-course prix fixe dinner. Diners can choose from the weekly rotating menu and imbibe in the accompanying wine and spirits list, with special cocktails crafted by mixologist and front-of-house manager Tabetha Warren.

Woo is a graduate of the California Culinary Academy and has worked in notable San Francisco kitchens, including Absinthe Brasserie, La Folie and Stars. In Portland, he worked at clarklewis before becoming co-owner/general manager of Vita Café.
