Salt
Executive chef Michael Stanton and selmelier Mark Bitterman have collaborated to create a menu that celebrates the Pacific Northwest and features curated salt pairings with each course. The Portland version of their dinner offers an upgraded seasonal menu, using salt to express the flavors and characteristics of Oregon’s bounty. The menu will be accompanied by hand-selected wine pairings from The Heathman’s sommelier James Rahn. The collaborative dinner starred at the James Beard House in New York City in April, and it is coming home to The Heathman as a benefit event for the James Beard Public Market.
