Basic Hard Cheeses/Cheddar 101
Excellent introductory class for new cheesemakers. You'll learn the basics of making any hard pressed cheese, and the particulars of Farmhouse Cheddar. Scott will demonstrate the process from start to finish, beginning with fresh liquid milk and ending the class with that cheese draining in a cheese press. You'll get to taste eight different examples of cheddar, including young and old, local and imported, flavored, smoked, and straight-up, and even cheddar made from goat's milk. Fee: $70
