Restaurant Redux

Portland’s Vino Paradiso has reimagined itself, starting with its name. Founder/owner Timothy Nishimoto and new co-owner Todd O’Connor recently held a contest to choose its new moniker. The winning entry, Coppia, was sent in from patron Melissa Louie.

Coppia means “pair” in Italian, which is appropriate for the biggest change of all, the restaurant’s new Piedmontese wine and food menu, and the kitchen’s new duo, chef Aren Steinbrecher and sous chef Jason Bokros.

Steinbrecher, an alum of Genoa’s kitchen team, has been gradually adding typical Piedmontese items to the menu over the summer.

Also new to the former Vino Paradiso is the hiring of sommelier Wil Stasney.
