Garithes me Feta (Shrimp with Feta)

Boedecker 2009 Old-Vine Pinot Gris


1 pound medium-sized prawns, shelled and deveined

1 pound fresh tomatoes, skinned, seeded and coarsely chopped

1 garlic clove, minced

1 medium onion, thinly sliced

1 cup Pappas Wine Co. Pinot Gris

8 ounces feta cheese, crumbled

2 tablespoons olive oil

* parsley for garnish


1. Heat olive oil in skillet over medium heat. Add onions and sauté until translucent. Add garlic and stir for 30 seconds. Add tomatoes and wine and sauté for another 15 minutes, uncovered. Sauce will thicken. Add feta and shrimp and serve as soon as the shrimp turns pink, 3 to 5 minutes. 2. Serve over rice pilaf and sprinkle with chopped parsley. Yields 6 servings.
