Winter-Spiced Molten Chocolate Cakes
“Now that the weather is cooling and the holidays are upon us, we enjoy serving our friends this heavenly, rich and lightly spiced chocolate dessert. We have experimented with this recipe, and it can be made ahead, frozen and then defrosted before baking. It turns out great. Hope you enjoy.” — Marilyn Turner
14 ounces bittersweet or semisweet chocolate, chopped
1¼ cups unsalted butter
2 teaspoons ground coriander
2 teaspoons ground cardamom
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground white pepper
6 large eggs
6 large egg yolks
2 teaspoons vanilla extract
3 cups powdered sugar
1 cup all-purpose flour
1. Generously butter eight ¾-cup soufflé dishes. Stir chocolate, butter and spices in saucepan over low heat until melted. Cool slightly. Whisk eggs, egg yolks and vanilla in large bowl to blend. Whisk in 3 cups powdered sugar, then chocolate mixture and then flour. You can use an electric mixture if you have one. Transfer batter to prepared dishes, filling to top. (Can be made one day ahead; if so, cover and refrigerate.) 2. Preheat oven to 400°F. Bake about 15 minutes (or 18 minutes for refrigerated batter). Allow cakes to rest in dishes 5 minutes to set, then run a small knife around cakes to loosen. Invert onto plate. Serve with whipped cream or ice cream.
