Learn to Make Cheddar Cheese
This class covers the basics of all hard cheese making, and covers the ancient additional step of "cheddaring" in particular. In honor of St. Patrick's Day, the demonstration cheese will be a cloth-wrapped Irish cheddar. We start with Kookoolan Farms fresh raw cow milk, and by the end of the class, the cheese will be finished and in the press. This class has a great cheese tasting plate, with eight different cheddars: local and imported; flavored, smoked and straight-up; young and well-aged; even one made from goat milk. You will learn the old-fashioned Real Cheddaring process, using traditional techniques, a step up in taste and complexity from simple farmhouse cheddar recipes. This class *is* suitable for beginners/novices.
