a Browne Family Wine Dinner
Brix Tavern will be kicking off its first paired event of the season with a four-course wine dinner. Dishes composed by Executive Chef Kevin Kennedy have been built specifically to complement the featured wines from John Freeman, the man behind both Waterbrook Winery and Browne Family Vineyards out of Walla Walla, Washington. Courtney Browne will be attending to present the wines and the stories behind them.
The meal starts off with a fresh bed of arugula, golden beets, and a lemon Meyer vinaigrette to pair with the 2015 Browne Sauvignon Blanc, followed by a roasted apple-smoked salmon on beluga lentils with grilled wild onions and the 2013 Waterbook Syrah. The evening features a roasted prosciutto-wrapped tenderloin on morel mushrooms and an asparagus risotto with the 2013 Waterbook Red Mountain Cabernet Sauvignon. Rounding things off is the ginger rhubarb crisp with vanilla bean ice cream served with the 2013 Waterbook Reserve Riesling.
