Peruvian Ceviche and Popcorn

"My mother created this recipe while living in Ecuador on my father's U.S. State Department assignment for the USAID (United States Agency for International Development). My mother followed her Peruvian cook around the kitchen taking notes and trying to emulate the creation and flavors of this ceviche. What follows is a delicious interpretation strongly influence by Peru's contribution to the popcorn scene. I have been makng this recipe for over 30 years! INGREDIENTS

1¼ cup shrimp (cooked)

1 small onion, thinly sliced

1/3 cup lime juice

2/3 cup orange juice

1½ tablespoons ketchup

1 teaspoon vegetable oil

½ teaspoon sugar

¼ teaspoon salt (plus)

¼ teaspoon hot sauce

* popcorn

DIRECTIONS

1. Combine all ingredients (except popcorn) and marinate in the fridge three-plus hours. 2. Serve with lightly salted popcorn to soak up some of the juice. Serves 2.
